Meat free challenge: Day 4

Today, I not only ate meat free, but I also hosted a meat free afternoon tea for three (do love a rhyme, ha)! OK, it wasn't really afternoon tea as I didn't bake any cake(s), but nevertheless, there were doughnuts and bikkies. I did, however, make three different types of open-faced sandwiches...

So the three different sandwiches were: egg and spring onion with basil vegannaise, cucumber with cream cheese and cottage cheese, and tomato with Tickler mature cheddar and cream cheese. To make this, you will need:

4 slices of white bloomer, cut into rounds
6 slices of cucumber
Juice of 1/3 of a lemon and some peel sliced very thinly
2 tablespoons cottage cheese
2 spring onions, cut diagonally
3 tomatoes, seeded
1 hard-boiled egg (boil for 8mins!)
40g Tickler extra mature cheddar (V), sliced like half of a matchbox
Salt and pepper
Basil vegannaise

First, get 2 tablespoons of cottage cheese and mix the lemon juice in. Season well.
To assemble the sandwiches, lay out the cut bread on a large serving dish/plate, and spread some cream cheese on 6 rounds of bread as the base layer. Next, distribute the 6 slices of cucumber across 6 bits of bread, then carefully scoop out the lemon cottage cheese on top of the cucumber slice. Decorate with a bit of the lemon peel. Then, go do the tomato ones - simply lay the tomato on top of the bread after you spread cream cheese as your base layer (should be 6 rounds) and place the cheese slices in the crevice where the seeds were. top with a bit of the greenest parts of your spring onion and crack some salt and pepper on top. Finally, spread some vegannaise on the remaining slices of bread then top these with sliced egg, and top with spring onion. Off you go! :-)

As I said, this wasn't your traditional afternoon tea. I had raspberry jam biscuits and triple chocolate chip cookies, crispbread, crackers and crisps! The remaining cottage cheese spread and vegannaise we used for dipping and spreading. I'm extra proud today as I managed to feed a couple of my friends (Thanks Gi & Ju, beijos!!!) and they both seemed to have thoroughly enjoyed it! Looking forward to Day 5 (the final day before I go off the radar!!!).
