Post-workout fuel

I find that after a workout, especially during the summer months, I always want something to cool me down. I can't say that this recipe is a completely balanced meal nutritionally (I'll look into it and update the post later on), but I think it's lush! It's essentially a vegetable bowl with fried eggs, but it is slightly spicy, nutty, and peppery and has both softness and crunch to it. For this you will need:

Approx 80g chunk carrot, julienned (don't worry so much about technique, as you can see mine's not particularly perfect! Rough around the edges is fine)
Approx 80g chunk cucumber, julienned
Approx 80g daikon, julienned
2 eggs
Handful shiitake mushrooms, sliced
Chilli flakes
Salt and pepper
4 tbsp sesame oil
Black sesame seeds

Pour half the sesame oil onto a frying pan. Fry the mushrooms and 2 eggs to your taste. Remove from the heat. Arrange these on one side of the bowl. Toss the veg on the other side with the remaining sesame oil. Sprinkle chilli flakes and black sesame seeds on top. Finally, dust the eggs with a bit of sumac - I promise this will lift the flavour of the eggs! Season well.
