Stilton scramble

Two of my big life indulgences are: eggs and Stilton cheese. I'm sure I've talked about eggs before, how good they are, and how bloody good they are for you! So, I've decided that I'd very much like to combine these two ingredients for a scrumptious brekky. Everybody, meet the stilton scramble:

Perfectly scrambled eggs topped with crumbled stilton, served with a smoky smashed avo and rusk :-) You will need:

2 eggs (medium or large, up to you)
Knob of butter
20g blue Stilton cheese, crumbled
1/2 avocado
1/2 tsp smoked paprika
Salt and pepper to taste
Basil leaves (optional)
3 rusk - I use Pagen Krisprolls

Now. We start this off with the smashed avo. It's easy peasy, get an avocado half and mash this with a fork. Sprinkle with salt and pepper and fold it all in together. Top this with smoky paprika for full flavour!

I know scrambled eggs is pretty basic but it's one of those things that you need to get spot on otherwise you'll get an almost rubbery-like texture, which we definitely do not want! Start off by beating the eggs in a bowl, getting some air into them. Then, put a pan over low/medium heat and melt the butter (making sure you get it all the way through the sides also)... Mmmm. Pour the eggs into the pan and scramble away, scraping from the sides using a spatula. You want to stop when the mixture looks slightly runny still.

Get it out the pan, plate up, and top the eggs with crumbled Stilton. I guess if you're not a fan of mouldy cheese Parmesan (or veggie Parmesan) is a perfect replacement. Tear some basil leaves on top of everything, or not.

This really should take no longer than 5 minutes of your time so you have no excuse for making it for brekky!
