#meatfree mexicana

Why hello there! I've just come back from a brilliant holiday in Canada, and I thought, what better way to return to the grind by sharing a #meatfreemonday recipe? A few weeks ago (when it was still warm and sunny) I put together a Mexican inspired salad, which is super simple and easy to personalise! It is also quite therapeutic to make as there’s quite a bit of chopping, slicing and dicing, and mixing involved. Here’s what you need:

1 avocado, sliced like how you want it (you’ll see in the pictures that mine look like mini-matchsticks)
1 tin 340g salt-free sweet corn
1 clove of garlic, crushed then finely chopped
½ red onion, sliced thinly
80-100g cucumber, sliced how you want it (initially I sliced these into rounds but then sliced them up like matchsticks, too)
1/3 yellow capsicum (or a whole one if you happen to have a small one), sliced
½ head of lettuce, chopped
Handful of fresh herb(s), roughly chopped – I used coriander but I know lots of people who hate it so feel free to replace this with mint and/or flat leaf parsley
1 tsp Sea salt
1 tsp Black pepper
1 tsp Paprika
1 tsp chipotle chili flakes
Juice and zest of 1 lime
Extra virgin olive oil (twice the volume of the lime juice)
Sunflower seeds, or any seeds of your choice

You’ll see from the bowl (pictured above) that I started off with the chopped lettuce, but the layers aren’t something to strictly follow. Have fun with it - I just wanted to see the different colours build up as I was going along. Although, thinking about it, the lettuce was the biggest veg on my kitchen bench and I don’t have a lot of room to work on so I guess that definitely had to go first! I added the rest of the veg and herbs in, and poured the lemon juice over the top of the mix. I let this mascerate a little bit, then I mixed it all together (with clean hands). Whilst combining I also added the olive oil, salt, pepper, chili flakes, and paprika. Once everything is mixed evenly, I ate a hefty serving for dinner! Enjoy :-)
