#meatfreemonday: creamy chopped salad

Happy happy happy New Year, everyone! Here is a quick and easy chopped salad that can be eaten on its own, with warm pita bread, or paired with grilled chicken or any white fish (for those not going meat free). I think after all the Christmas festivities this is a good way to get back into the grind without exerting too much effort...

You'll need:
1 vine tomato, diced
1 medium avocado, diced
Maldon sea salt
Ground black pepper
2 tbsp natural yogurt
Good glug of extra virgin olive oil
1/5 yellow/orange capsicum, diced
small handful sunflower seeds (or any small nuts/seeds of your choice) 
80g cucumber, diced
1 clove garlic, grated
a'atar (optional)

Method
Mix all the chopped veg in a bowl. Add salt and pepper. Fold in the grated garlic. Top with the yogurt, olive oil, seeds and za'atar. That's pretty much it - you're good to go!

The photo on the right is what the salad will look like before you mix everything together. I recommend mixing it well, and if you have got perfectly ripe avocados they should cream a bit too, giving you a silky yet chunky salad!
